Tasting notes

Color: Pale gold with green reflections.

Nose: Finesse and fruit (green apple) accompanied by a few acidulous notes.

Palate:  A nice substance in the mouth, with a pleasant acidity and a nice fruitiness which combine perfectly. A balance that brings freshness, tonicity and a fairly long finish.

Wine and food pairing

Its liveliness and citrus notes stand up well to the iodine of oysters as well as the strong scent of goat's cheese. More simply, Bourgogne aligoté is one of the rare wines that can be enjoyed with salads, tabbouleh or steamed vegetables. The Bourgogne aligoté appellation is also a faithful companion of Burgundian gougères, snails and of course parsley ham.

Known in Burgundy since the 17th century, Aligoté is an original grape variety that is not very widespread in the world. It covers approximately 1580 hectares of vineyards throughout the region, from the Yonne in the north to the Rhône in the south, including the Côte d'Or and the Saône et Loire (Côte Chalonnaise, Mâconnais)

Vinification & ageing

Vinification in stainless steel vats at low temperature (16°C) to preserve all the freshness and tension of the grape variety. Aged for 6 months in stainless steel vats.
