Burgundy

Between Auxerre and Mâcon area, the vineyard of Burgundy extends over only 28,841 hectares, and produces 84 "Appellations d’Origine Contrôlée" (controlled origin designation). Its wines belong to the most prestigious appellations in the world and are being crafted by women and men across six different wine regions. Our wines reflect those exceptional terroirs, located between hilly sights, monumental cliffs and sunbathed slopes.

Tasting notes


  Color: Crimson or dark ruby.

  Nose: Aromas of red berries mixed with spicy nuances.

  Palate: This wine has a firm and straightforward taste, pleasant tannins once matured, and just the right amount of body.


Wine and food pairing


It goes well with such meats as rabbit, lamb or duck. An adaptable wine which, thanks to its attractive balance, commends itself to a wide range of dishes. Cheeses: mature Soumaintrain, Nuits d’Or, Reblochon fermier, Morbier.


Serving suggestions


Best served at a temperature of 14 to 16°C.


Ageing potential


It takes about 3 years to fully enjoy it, but it can age up to 8 years.

Origins


A regional appellation, the appellation extends over 19 communes in Côte d'Or. The vineyards of the Hautes-Côtes de Nuits stand alongside those of the Côte des Grands Crus de Bourgogne, at a higher altitude (300 to 400 m instead of 250 to 350 m), which is why the term "Hautes-Côtes" (High slope) is used. The Hautes-Côtes de Nuits cover approximately 750 hectares, of which 600 hectares are Pinot Noir.


Vinification & ageing


All the grapes pass over a sorting table and are then crushed, de-stemmed before fermentation in stainless steel tanks. Cold pre-fermentation maceration for 3 days. Alcoholic fermentation for 12 days with 2 pumping over and 2 punching down per day and light final warm maceration. Pressing then ageing in barrels for 10-12 months.
